Valencia senior Cory Otavka got the visitors on track early, scoring 15 points in the first half alone, including three 3-pointers.
Otavka's range caught Canyon (8-18, 2-8) off guard and after a fast start, Valencia (17-9, 5-5) built a lead of 50-18 going into halftime.
The hot shooting and shut-down defense continued into the second half as the Vikings cruised to victory.
Sophomore Lonnie Jackson finished with 16 points, including three threes, while senior Toki Oshodi added 10 for Valencia.
Freshman center Brandon Perry and senior Michael Edwards each posted 10 points for the Cowboys.
On senior night, Canyon said goodbye to Edwards, Dylan Defelicis, Gian Gamboa, Kyle Barrett, Joe Real and Jonathan Lawson.
Yet Cowboys head coach Chad Phillips looked ahead to the future and a group of guys who have learned a lot from this season.
"We said downstairs (in the locker room), we are going to dedicate any future success to our '09 seniors because they never gave up," said Phillips.
